Ingredients

The ingredients are:
  • 1 medium yellow onion (chopped)
  • 3/4 cup ketchup, divided
  • 2 tablespoons Dijon mustard (divided)
  • 1 cup shredded low-fat mozzarella cheese
  • 1/2 cup bread crumbs
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 teaspoons dried oregano
  • 1 large egg (lightly beaten)
  • 1 1/2 pounds lean ground beef
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper

How to Make

  • Step 1: Preheat oven to 375°F. Spray a medium skillet with cooking spray. Heat over medium-high heat. Add onions. Cook, stirring occasionally, until slightly soft, about 3-4 minutes.

  • Step 2: Mix onion, 1/4 cup ketchup, 1 tablespoon mustard, mozzarella, bread crumbs, parsley, Parmesan, oregano and egg in a large bowl. Add beef, garlic powder, salt and pepper. Mix lightly.

  • Step 3: Spray a loaf pan with cooking spray. Press beef mixture into pan. Combine remaining 1/2 ketchup and mustard in a small bowl. Spread over top of meat loaf.

  • Step 4: Bake meat loaf until set and cooked through, about 1 hour.
