Step 1

Preheat oven to 425°.

Step 2

Heat a skillet over medium-high heat; add breadcrumbs and cook 3 minutes or until toasted, stirring frequently.

Step 3

While breadcrumbs cook, heat a large skillet over medium-high heat.

Step 4

Coat pan with cooking spray.

Step 5

Add onion and garlic; sauté 3 minutes.

Step 6

Combine onion mixture, breadcrumbs, 1/4 cup ketchup, and remaining ingredients.

Step 7

Shape into 6 (4 x 2-inch) loaves on a broiler pan coated with cooking spray; spread 2 teaspoons ketchup over each.

Step 8

Bake at 425° for 25 minutes or until done.

I scaled back for one serve and used 125 grams of heart smart mince and cooked it in one of the holes of a Texas muffin pan and baked for 25 minutes and the end result was a perfect size, moist and delicious mini meat loaf for one. Thank you Luvcookn, made for Pick Me Tag Game.

This has already been requested again. So quick to make since you make the "mini" meatloaves instead of one large one. The flavor is wonderful. Really enjoyed the bite of the horseradish! Thanks for sharing!!
