Step by Step Method

Step 1

Melt butter in a Dutch oven over medium heat. Add onion, garlic, carrots and celery. Cook, stirring occasionally, until tender.

Step 2

Stir in thyme.

Step 3

Whisk in flour and cook until lightly browned, about 1 minute.

Step 4

Gradually stir in broth and milk and cook until slightly thickened. Stir in potatoes and bring to a boil.

Step 5

Reduce heat and simmer until potatoes are tender, about 15 minutes.

Step 6

Stir in chicken. Add cheese a bit at a time and stir until melted and smooth. Season with salt and pepper.

Step 7

If chowder is too thick, and more milk as needed to thin.

Step 8

Ladle into bowls and garnish with chopped parsley.

We loved this soup and next time will have to double the recipe. I used a red onion, matchstick carrots and Tyson chicken in the pouch. I did add a bit more sharp cheddar and topped with the parsley. Perfect comfort food and will be making it again soon! Thank you Mike for sharing this delicious recipe with us. Made and reviewed for the Football Pool - Week 4.

Daily Inspiration

This was really delicious and just what I needed. I purchased rotisserie chickens in order to make some soups and casseroles and this recipe was perfect. My only change was to omit the celery and I used organic gold potatoes vs. the red ones (didn't have them on hand). This soup made a great lunch today.

Great soup! Don't you love it when you have everything to make dinner and don't need to stop at the store for anything!!! This is this soup and it taste wonderful! I only had one potato and guessed at the amount of chicken I had and also the amount of cheese -- but it came out great! Thanks for sharing this keeper which I know we will be making often.
