Step by Step Method
Step 1
Pre-heat oven 400f.
Step 2
Reserve 1/2 cup cheese and 1/2 cup salsa.
Step 3
Mix together remaining cheese, salsa, meat, egg, crumbs & onion.
Step 4
Divide mixture and press into 4 lightly oiled muffin-pan cups.
Step 5
Make and indentation in the center of each meatloaf.
Step 6
Place on a foil coverd baking sheet.
Step 7
Bake for 25 minutes or until done (160F).
Step 8
Top with salsa & cheese & bake a further 10 minutes or until cheese has melted.
