Ingredients

The ingredients are:
  • 1 cup shredded cheese (3 cheese mexicana shredded cheese, divided)
  • 1 cup salsa (thick, chunky medium salsa, divided)
  • 1 pound lean ground beef
  • 1/2 cup yellow onions, finely chopped
  • 12 saltine (36 grams) crackers (finely crushed or 1/2 cup panko crumbs)
  • 1 large egg (lightly beaten)

How to Make

  • Step 1: Pre-heat oven 400f.

  • Step 2: Reserve 1/2 cup cheese and 1/2 cup salsa.

  • Step 3: Mix together remaining cheese, salsa, meat, egg, crumbs & onion.

  • Step 4: Divide mixture and press into 4 lightly oiled muffin-pan cups.

  • Step 5: Make and indentation in the center of each meatloaf.

  • Step 6: Place on a foil coverd baking sheet.

  • Step 7: Bake for 25 minutes or until done (160F).

  • Step 8: Top with salsa & cheese & bake a further 10 minutes or until cheese has melted.
