Loved this recipe! Like Nancy, mine didn't rise too much either, but it didn't affect the taste at all. We made this for Christmas dinner along with a prime rib roast. Yum! The topping makes the dish!

KATO BABY

Thank you for sharing this lovely recipe Dee. Both my husband and I loved it. It simply tasted awesome. Nice textures and a great flavor. I loved the topping it added a nice nutty crunchy texture that blended perfectly with the carrot. The spice and sweetness ratio were spot on. If you didn't know that it was carrots you would never guess. I can't wait to make this again. Made for What's on the Menu? tag game.

Daily Inspiration

Oh my goodness - was this delicious! We absolutely loved this carrot souffle. It didn't rise that much, but what we did get was a wonderful texture and awesome topping. Definitely a recipe that I will make again; especially during the holidays. This recipe is going into my Best of 2020 file. : )
