Step by Step Method

Step 1

In a saucepan combine first six ingredients (milk - pepper), 4 tablespoons brown sugar and the ginger slices; bring almost to a simmer, whisking frequently. Remove from heat; cover and steep for 10 minutes. Mix in 1/2 teaspoon vanilla.

Step 2

Meanwhile in a mixing bowl with electric beaters whisk cream, remaining brown sugar (1 tablespoon), grated ginger and remaining vanilla (1/2 teaspoon) until peaks form.

Step 3

Strain chocolate and ladle into 6 mugs, top each with a dollop of ginger cream.

This was a comforting drink where the spices really brought in exotic-type of warmth. I Loved the whipped cream flavored with ginger YUM and I will use this concept again. This was the first time that I had chai flavored hot chocolate. Though I enjoyed it, I found that I like chai as tea more than I like it with chocolate, but this is only a personal taste and by no means represents the recipe itself. Thank you ellie for sharing.
