Step by Step Method

Step 1

In Pam sprayed 2-quart saucepan

Step 2

Combine water and half the coconut milk

Step 3

Bring to a boil over medium-high heat.

Step 4

Add tapioca pearls, then lower heat to maintain a simmer and cook, stirring frequently

Step 5

To prevent tapioca pearls from clumping and sticking to bottom of pan

Step 6

Until tapioca pearls turn translucent, about 10 minutes

Step 7

Add bananas and let simmer until they soften

Step 8

Add remaining coconut milk along with the sugar and salt.

Step 9

Continue cooking and stirring until mixture comes to a gentle boil.

Step 10

Turn off heat

Step 11

Add vanilla

Wow! I used the exact ingredients (though did add extra sugar), but tweaked the prep. Soaked the tapioca in the liquid ingredients for five minutes, then cooked them. Added the bananas for another few minutes. It tasted great when warm, but the banana flavors intensified the longer it sat. We ate this at room temp. Delicious! Update: Even more banana flavor the next day, but after that the bananas start to turn...
