Ingredients

The ingredients are:
  • 2 1/2 cups water
  • 1 can(13 ounces) coconut milk, divided
  • 1/2 teaspoon vanilla extract
  • 1/3 cup small dried tapioca pearls
  • 1 pound bananas, peeled ,cut on a diagonal into 1-inch-thick slices
  • 3 tablespoons sugar
  • 1/8 teaspoon salt

How to Make

  • Step 1: In Pam sprayed 2-quart saucepan

  • Step 2: Combine water and half the coconut milk

  • Step 3: Bring to a boil over medium-high heat.

  • Step 4: Add tapioca pearls, then lower heat to maintain a simmer and cook, stirring frequently

  • Step 5: To prevent tapioca pearls from clumping and sticking to bottom of pan

  • Step 6: Until tapioca pearls turn translucent, about 10 minutes

  • Step 7: Add bananas and let simmer until they soften

  • Step 8: Add remaining coconut milk along with the sugar and salt.

  • Step 9: Continue cooking and stirring until mixture comes to a gentle boil.

  • Step 10: Turn off heat

  • Step 11: Add vanilla
