Step 1: In Pam sprayed 2-quart saucepan
Step 2: Combine water and half the coconut milk
Step 3: Bring to a boil over medium-high heat.
Step 4: Add tapioca pearls, then lower heat to maintain a simmer and cook, stirring frequently
Step 5: To prevent tapioca pearls from clumping and sticking to bottom of pan
Step 6: Until tapioca pearls turn translucent, about 10 minutes
Step 7: Add bananas and let simmer until they soften
Step 8: Add remaining coconut milk along with the sugar and salt.
Step 9: Continue cooking and stirring until mixture comes to a gentle boil.
Step 10: Turn off heat
Step 11: Add vanilla
