"This is a recipe that I found many years ago on the internet. I have made it many times and people can't believe carrots can taste so good. I usually use the baby carrots rather than cleaning and cutting regular size carrots."

Step by Step Method
Step 1
Parboil carrots until al dente, about 10 minutes.
Step 2
Drain and rinse under cold water to stop the cooking. This can be done a couple of hour ahead of time.
Step 3
Heat butter over medium heat until melted. Add carrots and sugar; heat to carmelize sugar.
Step 4
Add Amaretto and cook to reduce sauce to a glaze.
Step 5
Add salt and pepper to taste.
