Step 1: Parboil carrots until al dente, about 10 minutes.
Step 2: Drain and rinse under cold water to stop the cooking. This can be done a couple of hour ahead of time.
Step 3: Heat butter over medium heat until melted. Add carrots and sugar; heat to carmelize sugar.
Step 4: Add Amaretto and cook to reduce sauce to a glaze.
Step 5: Add salt and pepper to taste.
