  • When selecting potatoes, look for small ones that will fit in a single layer in the skillet.
  • For a low-calorie version, use brown sugar splenda instead of regular brown sugar.

  • Substitute honey for the brown sugar - Honey has a sweeter taste than brown sugar, and can help bring out the natural sweetness of the potatoes.
  • Substitute olive oil for the butter - Olive oil is a healthier alternative to butter, and will still help to caramelize the potatoes.

Garlic and Parmesan Potatoes Melt butter in a skillet large enough for a single layer of potatoes. Stir in the brown sugar and let it melt. Add potatoes and shake them to totally coat them. Sprinkle with garlic powder, Parmesan cheese, and parsley. Cook for 3-5 minutes until they are heated through - serve.

Roasted Brussels Sprouts - Roasted Brussels sprouts are the perfect side dish to go with carmelized canned potatoes. The nutty flavor of the Brussels sprouts will complement the carmelized potatoes, while the roasted texture adds a nice contrast to the creamy potatoes.

Garlic Roasted Asparagus: Garlic roasted asparagus is the perfect complement to roasted Brussels sprouts and carmelized canned potatoes. The garlic flavor will add a nice kick to the dish, while the roasted texture of the asparagus will provide a nice contrast to the creamy potatoes.

I can't say I have made Bergy's recipe, but I want to vouch for it being a fantastic recipe. I have made this recipe for many years (I add a touch of rosemary) to mine, but for people who haven't tried this; it really is wonderful. You need to try it. And, as Bergy said, it really it a time saver and you would never know they were canned potatoes.
