Step by Step Method
Step 1
Cut a circle from parchment paper to fit a large nonstick skillet.
Step 2
Heat the skillet over medium heat. Add butter and oil to the pan; swirl until butter melts.
Step 3
Add the ginger and cardamom to the pan; cook 2 minutes. Add 1/2 cup water, sugar, and carrots; bring to a boil. Cover with the parchment paper circle; reduce heat, and simmer for 9 minutes or until the carrots are crisp tender. Remove the parchment circle and discard.
Step 4
Sprinkle the carrot mixture with salt, pepper, and cilantro, if desired.
