Step by Step Method

Step 1

Saute vegetables in butter over medium heat until soft.

Step 2

Add all other ingredients and stir well. Bring to a boil reduce the heat and cover.

Step 3

Turn heat to low for 25 minutes.

Step 4

Let set 5 minutes covered off heat.

Oh my goodness - this rice is FANTASTIC! I did add more Cajun seasoning (Tony Cacheres) till I got the saltiness and spiciness we were looking for), and used up some chicken broth to sub for water. But this recipe is spot on. I wanted to keep on eating it, long after I was full. Thankfully, I decided to save it for tomorrow's lunch! Thanks for sharing - this is going straight into my Best of 2024 file!
