  • 2 tablespoons butter
  • 2 teaspoons Cajun seasoning
  • 10 ounces Rotel tomatoes (1 can)
  • 1/2 cup celery, diced
  • 1/2 cup green onion, minced
  • 1/2 cup yellow onion, minced
  • 1/2 cup red bell pepper, minced
  • 8 ounces raw white rice (1 1/3 cups)
  • 2 1/3 cups water

How to Make

  • Step 1: Saute vegetables in butter over medium heat until soft.

  • Step 2: Add all other ingredients and stir well. Bring to a boil reduce the heat and cover.

  • Step 3: Turn heat to low for 25 minutes.

  • Step 4: Let set 5 minutes covered off heat.
