Cajun Grilled Potato Wedges With Dipping Sauce

"So, my husband is not a fan of baked potatoes, I dearly love them. This recipe was an attempt to please both of us and it absolutely worked. Love these taters, we typically serve these whenever we grill steaks. These taters are low in fat, although you can use full fat sour cream for the dipping sauce if desired."

Step by Step Method

Step 1

Arrange potatoes on a large microwave dish. Drizzle with olive oil and sprinkle with seasonings - salt, pepper, onion powder, paprika, thyme, cayenne and parsley flakes. Cover with plastic wrap or a paper towel and cook in microwave for 10 minutes. You don't want them completely cooked, about halfway finished.

Step 2

Cook potatoes over hot coals for approximately 5 minutes per side - until you see a nice browning, and serve with the dipping sauce.

Step 3

For the dipping sauce - combine the sour cream, garlic clove, diced green onions and dry ranch dressing. Mix well and chill until serving time.

This recipe is a keeper...I loved the ease of prep and how quickly it cooked using the microwave...the spices were perfect and the dipping sauce was amazing...we loved these wedges...made for "Pick Me" tag game...thanks for sharing your recipe...

Excellent!! I scaled the recipe down for 2 potatoes and only did about 1/6th of the sour cream mixture. The method of microwaving and then grilling worked out perfectly! The potatoes were so crispy. The spice mixture was perfect and so tasty. I'm glad I made the sour cream mixture for dipping - it was perfect with the spiced potatoes. I'm putting this into my best of 2015 file. Thank you!
