Ingredients

The ingredients are:
  • 2 1/4 pounds potatoes (6 Yukon Gold, cleaned and cut into wedges)
  • 1 tablespoon olive oil
  • 1 tablespoon salt
  • 1/2 tablespoon pepper
  • 1 teaspoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon thyme
  • 1/2 to 1 teaspoon cayenne pepper
  • 1 tablespoon dried parsley flakes
  • 2 cups low-fat sour cream
  • 6 green onions
  • 1 garlic clove, minced finely
  • 1 tablespoon dry Ranch Dressing mix

How to Make

  • Step 1: Arrange potatoes on a large microwave dish. Drizzle with olive oil and sprinkle with seasonings - salt, pepper, onion powder, paprika, thyme, cayenne and parsley flakes. Cover with plastic wrap or a paper towel and cook in microwave for 10 minutes. You don't want them completely cooked, about halfway finished.

  • Step 2: Cook potatoes over hot coals for approximately 5 minutes per side - until you see a nice browning, and serve with the dipping sauce.

  • Step 3: For the dipping sauce - combine the sour cream, garlic clove, diced green onions and dry ranch dressing. Mix well and chill until serving time.
