Step 1: Arrange potatoes on a large microwave dish. Drizzle with olive oil and sprinkle with seasonings - salt, pepper, onion powder, paprika, thyme, cayenne and parsley flakes. Cover with plastic wrap or a paper towel and cook in microwave for 10 minutes. You don't want them completely cooked, about halfway finished.
Step 2: Cook potatoes over hot coals for approximately 5 minutes per side - until you see a nice browning, and serve with the dipping sauce.
Step 3: For the dipping sauce - combine the sour cream, garlic clove, diced green onions and dry ranch dressing. Mix well and chill until serving time.
