Step by Step Method
Step 1
In a large bowl, whisk together the flour, sugar, salt, and baking powder.

In a separate bowl, mix the eggs, milk, vanilla, and 2 tablespoons of oil.

Ensure there are no lumps in the batter.

Stir in the grated apple until well incorporated.

If not using a deep fryer, heat 2 cups of oil over medium heat.

During the frying process, replenish the oil twice, reheating it each time.

Test the oil by dropping a little batter into it; it should sizzle.

Using a tablespoon or small scoop, drop three or four fritters at a time into the oil.

Fry until golden on one side, approximately two minutes.

Flip the fritters and fry on the other side until golden brown.

Ensure the oil is hot enough for frying but not too hot that the fritters brown too quickly.

Use a slotted spoon or spatula to remove the cooked fritters and place them on a paper-towel lined plate.

Let the fritters cool, then dust them with confectioner's sugar before serving.
Step 14
Serve the fritters with coffee or yerba mate.
