Step 1: In a large bowl, whisk together the flour, sugar, salt, and baking powder.
Step 2: In a separate bowl, mix the eggs, milk, vanilla, and 2 tablespoons of oil.
Step 3: Ensure there are no lumps in the batter.
Step 4: Stir in the grated apple until well incorporated.
Step 5: If not using a deep fryer, heat 2 cups of oil over medium heat.
Step 6: During the frying process, replenish the oil twice, reheating it each time.
Step 7: Test the oil by dropping a little batter into it; it should sizzle.
Step 8: Using a tablespoon or small scoop, drop three or four fritters at a time into the oil.
Step 9: Fry until golden on one side, approximately two minutes.
Step 10: Flip the fritters and fry on the other side until golden brown.
Step 11: Ensure the oil is hot enough for frying but not too hot that the fritters brown too quickly.
Step 12: Use a slotted spoon or spatula to remove the cooked fritters and place them on a paper-towel lined plate.
Step 13: Let the fritters cool, then dust them with confectioner's sugar before serving.
Step 14: Serve the fritters with coffee or yerba mate.
