Step by Step Method
Step 1
Steam or roast butternut squash.
Step 2
Cook quinoa so you have 1 cup.
Step 3
Mix together the squash, quinoa, beans, and scallion.

Season with garlic powder, cumin, salt, and pepper.

Place 1 cup filling on a tortilla, top with cheese, then roll/fold as desired. Grill both sides (or use a panini press).
