WOW! Not at all what I expected from a flan! This turns out more like a flourless chocolate torte. It is super dense and creamy at the same time. There isn't very much "sauce" like a regular flan. But no matter - this is absolutely delicious! I only made a half recipe and am so glad I did. It's probably enough to serve 10-12 people, because it's so incredibly dense and rich. Made the half recipe using three eggs, and in a 6 inch cake pan, inset in a 9 inch cake pan for the Bain Marie. It was unclear if the sugar was for dusting the pan or included in the batter, so I used it to dust the pan. Glad I did because the flan would have been too sweet if incorporated in the batter. Definitely a company-worth dessert that's super easy to make. Served with chocolate whipped cream from DH's C02 thing-a-mabob that he got for Christmas. Yum!
