Step 1
In medium bowl, whisk together olive oil, vinegar, honey, mustards, bourbon and cayenne, if using. Pour into gallon-size zip-top bag. Add pork and marinated 30 minutes at room temperature or up to 4 hours in refrigerator (remove from refrigerator 30 minutes before grilling).
Step 2
Preheat grill to medium-high heat. Remove pork from marinade and place on lightly oiled grill, cooking 6-8 minutes per side, or until pork reaches a safe internal temperature of 145°F. Let pork rest 3-5 minutes before slicing into medallions. Refrigerate any leftovers.
