Bourbon Honey Mustard Pork Tenderloin

Step 1

In medium bowl, whisk together olive oil, vinegar, honey, mustards, bourbon and cayenne, if using. Pour into gallon-size zip-top bag. Add pork and marinated 30 minutes at room temperature or up to 4 hours in refrigerator (remove from refrigerator 30 minutes before grilling).

Step 2

Preheat grill to medium-high heat. Remove pork from marinade and place on lightly oiled grill, cooking 6-8 minutes per side, or until pork reaches a safe internal temperature of 145°F. Let pork rest 3-5 minutes before slicing into medallions. Refrigerate any leftovers.

Wow, I am so glad that I saved this to be the last recipe that I made. It is awesome, tender, flavorful and delicious. I loved it as did my bil & sil. I made as written but used Jack Daniels - Tennessee Honey in place of the bourbon, (I didn't have any). This liqueur worked well with this dish. Delicious -- I marinated ours for about 4 hours and we also used the apple cider option. So tender you can cut it with a fork and oh so good! Thanks for sharing!
