Step by Step Method

Step 1

In a small saucepan or in the microwave, melt the butter and set aside to cool.

Step 2

In a large bowl, whisk together the flours, cornstarch, sugar, baking powder, and salt; set aside.

Step 3

To make the flour mixture, add the cooled butter, milk, eggs, and vanilla and whisk to combine well.

Step 4

Preheat your waffle iron according to the manufacturer’s instructions, allowing the batter to sit for 5 or so minutes. When ready, cook the batter follow according to the manufacturer’s instructions. Serve immediately, while the outside is still crispy (keeping in mind that if you stack cooked waffles while you finish cooking the batter, they will steam and get soggy), or allow to cool completely before packing in a sealed container or resealable plastic bag in the refrigerator for up to 2 days or in the freezer for up to 3 months.

Step 5

Enjoy!

  • For a healthier alternative, use all whole wheat flour instead of the combination of all-purpose and whole wheat pastry flour.
  • If you don't have cornstarch, you can substitute with 2 tablespoons of all-purpose flour.

  • Substitute coconut oil for the butter to make the waffles vegan. The benefit of this substitution is that it adds a subtle coconut flavor and makes the waffles vegan-friendly.
  • Substitute almond milk for the cow's milk to make the waffles dairy-free. The benefit of this substitution is that it makes the waffles dairy-free and still adds a creamy texture.

Apple Cinnamon Waffles Replace the vanilla extract with 1 teaspoon of ground cinnamon and add 1/2 cup of finely chopped apples to the batter.

Maple-Glazed Bacon: Crispy bacon glazed with a sweet maple syrup. Perfect for adding a salty-sweet flavor to the waffles and creating a delicious breakfast dish.

Scrambled Eggs with Cheese: Scrambled eggs with melted cheese is a classic breakfast dish that pairs perfectly with the sweet maple-glazed bacon. The creamy cheese creates a delicious contrast to the salty bacon, making it a great addition to the breakfast plate.
