"Bacon grease people, a must. Also they only watered down the milk when times were really tight. This is how we got rid of bread ends. Her Mom saved them in a bread bag in the freezer, when the bag was full she toasted up the bread, tore or cut into bite size pieces. People mentioned that it had to be good bologna, but that may not be the case with this recipe. It can also be served with biscuits and fried eggs."

Step by Step Method

Step 1

Cut bologna into 6 pieces.

Step 2

Heat bacon grease and fry bologna until cooked but not brown.

Step 3

Remove.

Step 4

Add flour and brown.

Step 5

Add milk and water, whisk until flour is incorporated.

Step 6

Add bologna back in and season to taste. We like pepper so we add more.

Step 7

Simmer for 10 minutes, adding water as needed.

Step 8

The longer gravy cooks the better.
