Step 1: Cut bologna into 6 pieces.
Step 2: Heat bacon grease and fry bologna until cooked but not brown.
Step 3: Remove.
Step 4: Add flour and brown.
Step 5: Add milk and water, whisk until flour is incorporated.
Step 6: Add bologna back in and season to taste. We like pepper so we add more.
Step 7: Simmer for 10 minutes, adding water as needed.
Step 8: The longer gravy cooks the better.
