Boiled Raisin Cookies
"These were really good and easy to make too. They are also very forgiving -- we didn't have quite enough oats so used extra flour to equal the amount needed and they still worked out great! Moist and spicy!"

Step by Step Method
Step 1
In a saucepan over medium high heat add the raisins and water and bring to a boil. Boil for 5 minutes and then let cool to room temperature.
Step 2
In the bowl of an electric mixer cream the butter and sugars together. Beat in eggs one at a time.
Step 3
Stir in the remaining ingredients (baking soda - nuts). Pour in the raisins and the juice (from boiling the raisins); stir well to combine.
Step 4
Drop by spoonfuls onto greased baking sheets.
Step 5
Bake at 350 degrees F for 10-15 minutes.
Step 6
We made 3 dozen from this recipe but the original recipe says it should make 6 dozen.
