Step by Step Method

Step 1

If you are not using buttermilk, go ahead and mix your milk and vinegar together so it can sit for 5 minutes.

Step 2

Preheat oven to 350 degrees.

Step 3

In a medium bowl cream butter with sugar and lemon juice until light and fluffy. Blend in egg and vanilla, then the buttermilk (or milk/vinegar mixture)

Step 4

In a small bowl, combine salt, baking powder, and 1 3/4 cups flour. SLOWLY blend in the wet mixture until combined

Step 5

In a small bowl, coat blueberries with the 1/4 cup flour and then VERY GENTLY stir into dough (it's ok if you break a few)

Step 6

Press batter into a greased 8x8 or 9x9 inch square baking dish.

Step 7

Bake for about 40 minutes or until it passes the toothpick test.

Step 8

Let cool and store at room temperature!

Very good bars which are easy to make and fun to eat. I did have to cook them a little longer - I used the smaller 8 x 8 inch pan though. Thanks for sharing!
