Step 1: If you are not using buttermilk, go ahead and mix your milk and vinegar together so it can sit for 5 minutes.
Step 2: Preheat oven to 350 degrees.
Step 3: In a medium bowl cream butter with sugar and lemon juice until light and fluffy. Blend in egg and vanilla, then the buttermilk (or milk/vinegar mixture)
Step 4: In a small bowl, combine salt, baking powder, and 1 3/4 cups flour. SLOWLY blend in the wet mixture until combined
Step 5: In a small bowl, coat blueberries with the 1/4 cup flour and then VERY GENTLY stir into dough (it's ok if you break a few)
Step 6: Press batter into a greased 8x8 or 9x9 inch square baking dish.
Step 7: Bake for about 40 minutes or until it passes the toothpick test.
Step 8: Let cool and store at room temperature!
