Step by Step Method

Step 1

Heat the oven to 350° Fahrenheit.

Step 2

Grease a 9 X 5 inch loaf pan, or grease three mini loaf pans.

Step 3

In a large bowl, stir the bisquick, oats, sugar, bananas, milk, and eggs together until they are moistened. With a spoon, beat vigorously for 30 seconds. Set the bowl aside.

Step 4

In a small bowl, place in the blueberries and just enough of the flour to coat them. Mix until all the blueberries are coated.

Step 5

Gently stir the blueberries into the large bowl. Pour everything into your loaf pan or pans.

Step 6

For one large loaf pan, bake for 45 to 55 minutes. For the three mini loaf pans, bake for 30 to 35 minutes. Bake until a toothpick inserted in the center comes out clean.

Step 7

Cool for 10 minutes. Remove the bread from the pan and put on a wire rack to finish cooling completely, about 2 hours. Do not slice until it is completely cool.

Tips


  • You will need a 9 x 5 loaf pan or three mini loaf pans.

This has a great texture and I love that it isn't overly sweet. I enjoyed with a little bit of butter spread on top and a cup of hot tea. I like the trick with the flour on the blueberries before stirring into the batter and using the Bisquick made this easy! At first, I didn't think there was enough liquid but after stirring vigorously, it came together. It baked up beautifully, so the amount of liquid was spot on. I baked in a well-greased Bundt pan for 45 minutes.

Very tasty Mr picky happy guy I used mikekeys clone of Bisquick https://www.recipezazz.com/recipe/buttermilk-biscuit-mix-homemade-bisquick-33703 That things the best and I used a bit more milk really nice recipe
