Editorial Notes

The ingredient tips, suggestions, variations, facts, questions and answers below are not edits to the original author's recipe. They are not meant to imply any change would improve the recipe. • When selecting the tilapia, look for pieces that are the same size so they cook evenly.
  • When cutting the pineapple and red pepper, use a sharp knife to get thin matchstick pieces.

  • Substitute salmon for the tilapia: Salmon is a higher-fat fish, which means it has a higher content of omega-3 fatty acids, making it a healthier choice. This substitution will make the dish even more heart healthy.
  • Substitute Greek yogurt for the sour cream: Greek yogurt is a lower-fat and lower-calorie option than sour cream, making it a healthier choice. This substitution will make the dish even more nutritious.

Vegetarian Version Substitute tofu for the tilapia and use a vegetable-based oil instead of olive oil. Omit the Cajun seasoning and instead season with garlic powder, onion powder, smoked paprika, and chili powder. Roast the tofu for 15-20 minutes or until golden brown.

Mexican Rice Pilaf with Corn and Peppers:

The combination of rice, corn, peppers, and spices adds a flavorful and colorful accompaniment to the tacos. The corn and peppers add a nice crunch to the dish, and the spices bring out the flavors of the fish.

Tomatillo Avocado Salsa: This tangy and creamy salsa is the perfect complement to the Mexican Rice Pilaf. The combination of tomatillos, avocados, cilantro, and jalapenos adds a delicious zing to the dish. The avocados provide a creamy texture, while the jalapenos bring a nice kick of heat. This salsa is a great way to add a flavorful and colorful touch to your meal.
