Ingredients

The ingredients are:
  • 1 tablespoon plus 2 teaspoons olive oil (divided)
  • 3 limes, zest, juiced and wedge (divided)
  • 2 tablespoons Cajun seasoning
  • 1 pound tilapia (cut into 3-inch pieces)
  • 3/4 teaspoon salt (divided)
  • 1/4 large pineapple (cored and cut into matchsticks; about 1 cup)
  • 1 small red pepper (thinly sliced)
  • 2 green onions (sliced into 3-inch matchsticks)
  • 8 ounces small tortillas (8)
  • 4 leaves red cabbage, halved
  • Sour cream
  • Cilantro
  • Lime wedge

How to Make

  • Step 1: Heat oven to 400°F. Drizzle 2 teaspoon olive oil on rimmed baking sheet. From 2 limes, grate 1 tablespoon zest and in separate bowl squeeze 4 tablespoons juice. Place 2 tablespoons Cajun seasoning in shallow bowl. Drizzle lime juice over 1 pound tilapia pieces, season with 1/2 teaspoon salt and dip in blackening seasoning. Transfer to baking sheet and roast until opaque throughout, 10 to 12 minutes.

  • Step 2: In second bowl, toss pineapple matchsticks and sliced red pepper with lime zest, 1 tablespoon olive oil and 1/4 teaspoon salt; fold in green onions.

  • Step 3: Top 8 small tortillas (warmed) with red cabbage halves, fish and slaw. Top with sour cream and cilantro and serve with lime wedges if desired.
