Step by Step Method
Step 1
Peel the kiwifruit and mash them in a bowl until pureed.
Step 2
Stir 2 tablespoons sugar into the fruit, cover, and refrigerate for 1 hour.
Step 3
Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes. Whisk 1 cup sugar into the eggs, a little at a time, then continue whisking until completely blended, about 1 minute more.
Step 4
Pour in the cream and whisk to blend.
Step 5
After the kiwi has spent 1 hour cooling in the refrigerator, stir the kiwifruit into the egg, sugar, and cream mixture.
Step 6
Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions.
