Step by Step Method

Step 1

In a large skillet, warm the olive oil, add the beef, working in batches not to overcrowd the pan, and cook for 1-2 minutes per side until browned. You don’t need to cook the beef all the way through.

Step 2

Once the beef is seared, place it in the slow cooker, add the curry powder, salt, red pepper flakes and ginger and stir until the beef is well coated in the spices.

Step 3

Add the diced onion and minced garlic to the slow cooker, and stir to combine. Then pour in the diced tomatoes, tomato paste, and coconut milk, and stir again to combine.

Step 4

Cover the slow cooker with a lid and cook on high for 5-6 hours or on low for 8-10 hours until the beef is tender and can easily be pulled apart with a fork. Once complete, give everything a good stir, then taste the curry and adjust the seasoning with salt and pepper as needed.

Step 5

Serve. Garnish with chopped cilantro, if desired.

The house smelled great while this beef was cooking and I knew it was going to be Fab! In place of the crockpot, slow roasted in the oven at 250-degrees F for about 2.5 – 3 hours, sauteed the garlic with the onions, and, added a bit of lime zest and juice towards the end. Wonderful beef curry with the ease of using the slow cooker. I followed your recipe exactly, but left out the cilantro, which we don't like. Served over coconut rice with fresh naan, sambal oelek and mango chutney, shredded coconut and peanuts. Delicious! I will be be making this again! Thanks, Mike, for a real keeper!

This is delicious over rice. I used less meat than called for but about the same amount of the other ingredients. I also used the red pepper flakes option and skipped the garlic but used garlic salt in place of the salt. Wonderful curry which we enjoyed! Thanks for sharing!
