Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 2 pounds stewing beef, cute into 1-inch cubes
  • 1 teaspoon salt
  • 3 tablespoons curry powder
  • 1/2 teaspoon red pepper flakes, or chili flakes
  • 1 teaspoon ground ginger
  • 1 medium onion, diced
  • 6 cloves garlic, minced
  • 14 ounces diced tomatoes (do not drain) (1 can)
  • 2 tablespoons tomato paste
  • 14 ounces coconut milk (1 can)
  • Salt and pepper, to taste
  • Fresh cilantro, to serve (optional)

How to Make

  • Step 1: In a large skillet, warm the olive oil, add the beef, working in batches not to overcrowd the pan, and cook for 1-2 minutes per side until browned. You don’t need to cook the beef all the way through.

  • Step 2: Once the beef is seared, place it in the slow cooker, add the curry powder, salt, red pepper flakes and ginger and stir until the beef is well coated in the spices.

  • Step 3: Add the diced onion and minced garlic to the slow cooker, and stir to combine. Then pour in the diced tomatoes, tomato paste, and coconut milk, and stir again to combine.

  • Step 4: Cover the slow cooker with a lid and cook on high for 5-6 hours or on low for 8-10 hours until the beef is tender and can easily be pulled apart with a fork. Once complete, give everything a good stir, then taste the curry and adjust the seasoning with salt and pepper as needed.

  • Step 5: Serve. Garnish with chopped cilantro, if desired.
