Step by Step Method
Step 1
Mix together the herbs and seasoning and rub seasoning mix all over roast and place on rack in pan. Add a bit of beef or pork broth to bottom of pan and cook uncovered in 350 degree Fahrenheit oven until roast reaches 180 degrees (Depending on size, about 3 hours. Check every hour or so to make sure you still have liquid in the bottom of pan.)
Step 2
Take out of oven and let rest for 20 minutes.
Step 3
Meanwhile make gravy with drippings (I make a corn starch slurry by whisking 1 tablespoon cornstarch with 1/4 cup water then mix it in the drippings that I have brought to a boil)
Step 4
Slice and enjoy!
