Step 1: Preheat oven to 350 degrees Fahrenheit.
Step 2: Mix together the herbs and seasoning, and rub the seasoning mix all over the roast, making sure to get into all the crevices.
Step 3: Place the seasoned roast on a rack in a pan.
Step 4: Add a bit of water or broth to the bottom of the pan and cook uncovered in a 350-degree Fahrenheit oven until the roast reaches 180 degrees (Depending on size, about 3 hours. Check every hour or so to make sure you still have liquid in the bottom of the pan.)
Step 5: Take it out of the oven and let it rest for 20 minutes.
Step 6: Meanwhile, make gravy with drippings (I make a cornstarch slurry by whisking 1 tablespoon cornstarch with 1/4 cup water then mix it in the drippings that I have brought to a boil)
Step 7: Slice and enjoy!
