Step by Step Method

Step 1

Rinse and drain all beans and peas. Drain & chop tomatoes, reserving oil.

Step 2

Pour 1/4 cup of the reserved oil into a medium bowl. Whisk in vinegar, mustard, sugar, pepper, and salt.

Step 3

Place all beans, peas, and sliced onion into a large bowl. Drizzle the dressing over all; toss well to coat.

Step 4

Cover; refrigerate overnight.

I made this using the same amount of canned mixed beans instead of the beans and peas called for in the recipe and it was wonderful. The sun dried tomatoes is what makes this so great. Definitely a keeper!
