Step 1: Rinse and drain all beans and peas. Drain & chop tomatoes, reserving oil.
Step 2: Pour 1/4 cup of the reserved oil into a medium bowl. Whisk in vinegar, mustard, sugar, pepper, and salt.
Step 3: Place all beans, peas, and sliced onion into a large bowl. Drizzle the dressing over all; toss well to coat.
Step 4: Cover; refrigerate overnight.
