"It seems like this may have been based on a recipe I found in a Weight Watchers cookbook, but I can't swear to it. I know I've changed some things to make it better suit my mother's dietary needs, so I'm posting it even though I'm not entirely sure where the source recipe came from."

Step by Step Method
Step 1
Spray a nonstick skillet with cooking spray and heat over medium-high heat.
Step 2
Sprinkle both sides of each pork chop with lemon-pepper seasoning; add to pan and cook 3 minutes on each side to brown.
Step 3
Remove chops from skillet and keep warm; wipe drippings from skillet with paper towel and return to stove over medium-high heat.
Step 4
Combine vinegar and broth in skillet; bring to a boil, then cook, stirring occasionally, until slightly thickened, about 5 minutes.
Step 5
Return chops to skillet (discard any drippings that remain on plate) and turn to coat; cook an additional 2 minutes on each side (or until done). Serve chops drizzled with sauce that remains in pan after they are removed to plates.
