Step 1: Spray a nonstick skillet with cooking spray and heat over medium-high heat.
Step 2: Sprinkle both sides of each pork chop with lemon-pepper seasoning; add to pan and cook 3 minutes on each side to brown.
Step 3: Remove chops from skillet and keep warm; wipe drippings from skillet with paper towel and return to stove over medium-high heat.
Step 4: Combine vinegar and broth in skillet; bring to a boil, then cook, stirring occasionally, until slightly thickened, about 5 minutes.
Step 5: Return chops to skillet (discard any drippings that remain on plate) and turn to coat; cook an additional 2 minutes on each side (or until done). Serve chops drizzled with sauce that remains in pan after they are removed to plates.
