  • When using orange peel, make sure it is dried before adding to the mix.
  • You can adjust the measurements of the spices to your desired taste.

  • Substitute ground cardamom for the allspice - Cardamom has a similar flavor profile to allspice, but is slightly more floral and aromatic. This substitution would add a subtle complexity to the baking spice mix.
  • Substitute ground mace for the nutmeg - Mace has a similar flavor to nutmeg, but is slightly more pungent and aromatic. This substitution would give the baking spice mix a more intense flavor.

Cocoa Spice Mix In a medium bowl, combine 5 tablespoons ground cinnamon, 1 tablespoons ground allspice, 1 to 1 1/2 tablespoons grated orange peel (dried orange peel), 2 teaspoons ground nutmeg, 1 teaspoon ground cloves, and 1/2 teaspoons ground ginger. Replace the ground ginger with 1 tablespoon cocoa powder. Store in an air tight container.

This is similar to other blends I have made, but the dried orange peel sets it apart. Used it in Chef shapeweaver's Wacky Spice Cake recipe, and also put some in with the coffee grounds in my French Press pot and made delicious spiced coffee. Looking forward to trying it in holiday baked goods.

This recipe was made on 9/15/13 for the "Billboard Recipe Tag Game". Since I didn't need to make the full recipe,it was easily reduced by half. Two teaspoons of this mix was added to a 9 ounce box of yellow cake mix, and baked according to the directions on the box.For a frosting,I used Cream Cheese Frosting by Gerry which is posted on this site. And both my SO and I enjoyed the blend of spices,no one spice seemed to overpower another. Thanks for posting a wonderful spice mix. "Keep Smiling :) "

Have to agree with your previous reviewer - it smells heavenly! Tastes great too! So quick and easy to mix. I sprinkled about 3/4 teaspoon to my egg mix when making French Toast for lunch and it was so good! Will be keeping a jar of this mix close at hand.
