"This is a potato salad that tastes like a baked potato and is very different. Sometimes you like a potato salad that strays from the norm. You put anything into it that you would put on a baked potato. You don't have to be limited to what is listed. I tried to put down measurements that I would use, but I don't ususally measure anything because it depends on how many potatoes I bake. Use your own judgment."

Step by Step Method
Step 1
Bake the potatoes; cool slightly; peel; dice into a bowl.
Step 2
Mix mayonnaise and sour cream together; set aside.
Step 3
Fry bacon and crumble; add bacon to the potato along with the cheese, chives, salt, and pepper.
Step 4
Mix in mayonnaise mixture; toss gently; refrigerate and serve cold.
