Step 1: Bake the potatoes; cool slightly; peel; dice into a bowl.
Step 2: Mix mayonnaise and sour cream together; set aside.
Step 3: Fry bacon and crumble; add bacon to the potato along with the cheese, chives, salt, and pepper.
Step 4: Mix in mayonnaise mixture; toss gently; refrigerate and serve cold.
