"This is a potato salad that tastes like a baked potato and is very different. Sometimes you like a potato salad that strays from the norm. You put anything into it that you would put on a baked potato. You don't have to be limited to what is listed. I tried to put down measurements that I would use, but I don't ususally measure anything because it depends on how many potatoes I bake. Use your own judgment."

Step 1

Bake the potatoes; cool slightly; peel; dice into a bowl.

Step 2

Mix mayonnaise and sour cream together; set aside.

Step 3

Fry bacon and crumble; add bacon to the potato along with the cheese, chives, salt, and pepper.

Step 4

Mix in mayonnaise mixture; toss gently; refrigerate and serve cold.

Tips & Variations

No special items needed.



Delicious! I took the liberty of making a few changes. I added green olives and mustard, and omitted the cheese. I used shallots for the onion.

Had some steaks off the grill with this and it made a great meal. Great flavor in the salad. Loved the crunch of the carrots in it. Will make it again!

Yummy potato salad! I made it for a barbecue function that I had at the country club here in town. Lots of the golfer's wives came back to talk to me to ask me how this was made. It is go good that I am adding it to my regular sides to serve with my smoked ribs, sausage, and chicken.
