"This is a potato salad that tastes like a baked potato and is very different. Sometimes you like a potato salad that strays from the norm. You put anything into it that you would put on a baked potato. You don't have to be limited to what is listed. I tried to put down measurements that I would use, but I don't ususally measure anything because it depends on how many potatoes I bake. Use your own judgment."

Step 1

Bake the potatoes; cool slightly; peel; dice into a bowl.

Step 2

Mix mayonnaise and sour cream together; set aside.

Step 3

Fry bacon and crumble; add bacon to the potato along with the cheese, chives, salt, and pepper.

Step 4

Mix in mayonnaise mixture; toss gently; refrigerate and serve cold.

We love potato salad during the warm weather, and I was looking for something a little bit different. This salad is so good that we can't wait to have it again! The only change I made was to use chopped green onions instead of chives, and I added chopped peppers and carrots for crunch. Super delicious and we loved the addition of bacon and cheese!

Delicious! I took the liberty of making a few changes. I added green olives and mustard, and omitted the cheese. I used shallots for the onion.
