"A oldie and classic from an old 'Sunset Cookbook,' updated a bit. This is rich, decadent, delicious, and always a hit at potlucks, dinner parties, and buffet type of parties. It is 'kid' friendly - even though it is vegetables; but, it is just enjoyed by all. And, I have made this many times ... and this is one time when I can say, fresh is not always best. Yes, I prefer to use it; but in this dish. Frozen vegetables work just as well."

Step by Step Method

Step 1

Bread Crumbs ... Add the butter to a small microwaveable bowl or measuring cup and melt on medium low heat. Remove, and add the bread crumbs, parmesan cheese, and Italian seasoning and mix well to combine. Set to the side.

Step 2

Vegetables and Sauce ... Add the butter to a large saute pan and bring to medium heat. Add the onion and cook 4-5 minutes until tender. Then, stir in flour and mix until you get a roux type of consistency. Basically, until all the flour is completely mixed with the onions and butter (about 1 minute). Then slowly add the milk, Italian seasoning, garlic salt, and pepper and mix well using a whisk until all the flour is completely dissolved and the sauce begins to thicken, continuously stirring. Your burner should still be on medium heat.

Step 3

Cheese ... Once the sauce has thickened, reduce the heat to medium low; add the cream cheese and parmesan cheese and mix until all the cheese has melted. Once the cheese has melted, add the broccoli, cauliflower, and pimentos and toss to combine with the cheese sauce.

Step 4

Casserole and Bake ... Spray a 2 quart baking dish with a non-stick spray and pour in the vegetable mixture. Top with the bread crumbs and bake in a 350 degree oven, middle shelf, uncovered, for 30-40 minutes until golden brown.

Step 5

Serve and ENJOY! ... It is delicious with just about anything. As I said; perfect for family get-togethers, potlucks, parties, entertaining, buffet type of meals - or just a Sunday Dinner. It is rich, creamy, cheese, and just all around delicious!

So delicious that it would make any dinner feel like a holiday. I used a frozen vegetable medley of broccoli, cauliflower, carrots and yellow squash and it was wonderful! Low fat dairy products worked well to - still very creamy. My family felt like guests! Thanks Kchurchill5!
