Baileys and Coffee Fruit Cake

"I found this recipe in Taste Magazine. I had a lot of fruit in the pantry and a bottle of Baileys to use up and finding this recipe was wonderful. I only had chocolate milk and Tiramisu flavor Bailey's on hand, so I used what I had on hand. I also had walnuts on hand which I added in with the fruit....and this fruit cake turned out really well! Moist and rich with a wonderful flavor."

Step by Step Method
Step 1
Combine the dried fruit, iced coffee flavored milk and Baileys in a large bowl; stir to combine and cover bowl and place in the fridge overnight to soak.
Step 2
Remove the fruit mixture from the fridge and set aside for 30 minutes to come to room temperature.
Step 3
Meanwhile, preheat the oven to 180C/160C fan forced; grease a 20cm square cake pan then line the base and sides with baking paper.
Step 4
Add the flour to the fruit mixture & stir to combine and pour into the prepared pan and smooth the surface.
Step 5
Bake for 1 hour 45 minutes or until a skewer inserted into the center comes out clean; set aside in the pan for 30 minutes to cool slightly before transferring to a wire rack to cool completely.
