Step 1: Combine the dried fruit, iced coffee flavored milk and Baileys in a large bowl; stir to combine and cover bowl and place in the fridge overnight to soak.
Step 2: Remove the fruit mixture from the fridge and set aside for 30 minutes to come to room temperature.
Step 3: Meanwhile, preheat the oven to 180C/160C fan forced; grease a 20cm square cake pan then line the base and sides with baking paper.
Step 4: Add the flour to the fruit mixture & stir to combine and pour into the prepared pan and smooth the surface.
Step 5: Bake for 1 hour 45 minutes or until a skewer inserted into the center comes out clean; set aside in the pan for 30 minutes to cool slightly before transferring to a wire rack to cool completely.
