Ingredients

The ingredients are:
  • 1 kilogram mixed dried fruit (5 1/2 cups)
  • 500 milliliters iced coffee flavored milk (2 cups)
  • 125 milliliters Baileys Irish Cream liqueur (1/2 cup)
  • 300 grams self-raising flour, sifted (2 cups)

How to Make

  • Step 1: Combine the dried fruit, iced coffee flavored milk and Baileys in a large bowl; stir to combine and cover bowl and place in the fridge overnight to soak.

  • Step 2: Remove the fruit mixture from the fridge and set aside for 30 minutes to come to room temperature.

  • Step 3: Meanwhile, preheat the oven to 180C/160C fan forced; grease a 20cm square cake pan then line the base and sides with baking paper.

  • Step 4: Add the flour to the fruit mixture & stir to combine and pour into the prepared pan and smooth the surface.

  • Step 5: Bake for 1 hour 45 minutes or until a skewer inserted into the center comes out clean; set aside in the pan for 30 minutes to cool slightly before transferring to a wire rack to cool completely.
