Step by Step Method

Step 1

In a medium pot, cook the bacon until nicely browned. Remove from pot, saving about 2 tbsp bacon fat.

Step 2

In the reserved bacon fat, cook the onions over medium heat until translucent. Add garlic and cook about a minute until fragrant.

Step 3

Add bacon back to the pot. Add remaining ingredients.

Step 4

Cook over medium heat, stirring occasionally, for about 30-40 minutes until thickened and syrupy (there shouldn't be a lot of liquid remaining).

Step 5

In a mini food processor, puree about 1/2 cup of the jam, then combine with the rest. This will give it more of a jam consistency.

Step 6

Store in an airtight container. Makes about 2 cups of jam.
