Step by Step Method

Step 1

Toast bread.

Step 2

Meanwhile mix the mashed avocado with salt and pepper. Spread mixture on the toast.

Step 3

Place a skillet on medium heat. Spray skillet with nonstick cooking spray and cook the Canadian bacon until lightly browned (1 minute per side) and then transfer the Canadian bacon to the avocado toast. Remove skillet from heat; clean and then respray and place over medium heat and cook the egg sunny side up or oven easy (depending of your preference) (a minute or two) and then add egg over the Canadian bacon on the toast. Top with hot sauce if desired.

This was delicious! I've always intended to try Avocado Toast but haven't until now. I'm hooked! My Hubs wanted last night's leftovers for dinner tonight, so I made this for myself. He tasted it and was jealous. I used regular bacon because that's what I had. Thanks for sharing this recipe, Ellie! We'll enjoy this often!

Excellent! I actually used regular bacon, not Canadian. It was delish! My husband hates avocado, so I smeared his toast with hummus! I will be making this again with avocado just for me!!!
