Step by Step Method
Step 1
Preheat oven to 375 degrees. Grease a 9 x 13-inch baking dish or 3 quart baking dish with cooking spray.
Step 2
Peel the potatoes and slice into very thin slices, at the most 1/8-inch thick slices (use a mandolin for best results).
Step 3
Rinse potatoes in cold water.
Step 4
Combine the potatoes, garlic, butter and milk in a Dutch oven or large saucepan. Season with salt and pepper.
Step 5
Simmer over medium heat about 5 minutes or until the potatoes are slightly softened and the milk is slightly thickened and foamy. Stir often so the milk doesn't scald.
Step 6
Remove from heat and stir in the cheese. Pour the potatoes into the baking dish.
Step 7
Bake 1 hour uncovered until the potatoes are tender, the milk is absorbed and the top is nicely browned.
